Authentic Indian Chicken Curry Recipe

There are a lot of things you can do with chicken, but lately, we have been in love with this spicy and fragrant North Indian style chicken curry. This simple and easy Indian curry chicken recipe is another reason you would love to cook in your instant pot. Chicken curry, although its origin is found in India, is commonly found in many parts of the world. This is why there is no standard recipe for making it. In India too, due to cultural / regional influence, this dish has so many variations that no two dishes are the same. So here in this article we are going to cover the best authentic Indian chicken curry recipe.

Chicken curry marinade

Mix yogurt, lime juice, oil, chili powder, garam masala, salt, and fenugreek leaves to prepare the marinade.

Make 3-4 incisions on the chicken drumstick on both sides. These incisions allow the marinade to seep in making the chicken even more flavourful.

Coat the chicken drumsticks with the marinade till all pieces are evenly covered. Set it aside for about 20 minutes till you get the curry ready.

Chicken Curry Sauce Making Process

Select the Saute setting in the Instant Pot and adjust it too Normal.

Add oil and once heated, add all the spices – bay leaf, cinnamon stick, black cardamom, green cardamom, black pepper, cloves and fennel seeds (if using).

Allow the spices to submerge in oil for about 20 seconds. Add the chopped onion and let it cook until it is evenly browned (about 10 minutes).

Add minced ginger and garlic. Fry them for about a minute.

Add chopped tomatoes and mix well. Cook until tomatoes are soft and mashed (about 10 minutes).

Add salt and Kashmiri chilli powder and mix well.

Add marinated chicken to this curry and stir it. Let it cook in the sauce for about 2 minutes.

Add 1/4 cup of water and mix well. Deglaze – Use a spatula to dislike any bits sticking to the bottom of the pot.

Cover the instant pot, set the vent on high for 10 minutes, and pressure cook.

When the cooking cycle is complete, move the vent carefully to the venting position.

Open the lid, add garam masala and mix well.

Garnish the chicken with cilantro leaves and serve hot with rice, roti or naan.

Tips for making the best chicken curry

Marinating the chicken makes it moist and fragrant.

Cook onion until it becomes evenly brown. Caramelized onions add an extra oomph to this dish.

Set the chicken in the gravy before pressure cooking. This allows it to absorb flavors.

If possible, use bone-in chicken or chicken thighs. These cuts are tastier than chicken breasts.

There is no evaporation of water in the instant pot, so you have to make sure that you do not add more than 1/4 cup of water to cook the chicken. Don’t worry because there will be enough liquid due to yogurt and tomatoes.

Do not use a spoon to dislike any bits sticking to the bottom of the pot.
